This is one of my favourite mid-week meals. A delicious and simple recipe for sausage casserole made in the Ninja dual air fryer.

A saucy tomato and paprika-based casserole with sausage, peppers and onions – and roast potatoes or chips in the other basket! This makes a nice change from sausage and chips (although that’s great in the air fryer too). It works out much quicker than a traditional sausage casserole too – about half an hour!

The method below might look a little weird – you begin by cooking the sausage and veg in one of the sides of the air fryer, then transfer it into the other side (with no tray in) so cook the saucy bit of the casserole. This is so that the roast potatoes can be cooked in the flavoursome oil which the sausages and onions have infused – and, it saves washing up half way through the cooking cycle (else, we’d need to rinse out the original basket of the oil which you don’t want in the sauce). Trust the process, it works!

These are my all-time favourite sausages too, by the way. If you’re ever near a M&S I recommend picking some up – they’re perfect for anything from a fry up to toad in the hole.

How to make a sausage casserole with roast potatoes in the Ninja dual air fryer

1. Begin by cutting your onions and peppers into chunky but bite-sized pieces.

2. Then add in the sausages and sprinkle with the paprika and oil – cook these on air fry mode for 10 mins (default temperature)

3. Whilst the sausages are cooking – cut the potatoes into small-ish roast potato sizes (no need to peel, unless you want to).

Prepare the 50ml of chicken stock too by dissolving 1/4 of a stock cube into boiling water

4. After 10 mins the sausages should be browned on one side – turn them over and then cook for a further 5 minutes so they brown on the other side, too.

5. Once the sausages are browned all over – remove the ‘tray’ from the other basket – and add in all the sauce ingredients (tinned tomatoes, Worcestershire sauce, salt, sugar and chicken stock – and stir together to combine using a plastic utensil)

6. Then, use tongs or a spoon to move the sausages, peppers and onions into the basket with the sauce

Add the potatoes into the basket you just fried the sausages in and shake so they’re coated in the flavoured oil (add a little more oil if needed)

Cook the potatoes on air fry for 15-20 minutes (default temperature)

And the saucy casserole on bake for 15 minutes

7. Then, it’s done! Serve and enjoy

A delicious sausage and tomato casserole in just 30 minutes! With a tomato, garlic and paprika sauce, this is a firm family favourite recipe!

Ingredients

  • 4-6 sausages (or, however many you'd usually cook for 2 people)
  • 1 onion
  • 1 tsp paprika
  • 2 bell pepper
  • 2 potatoes (optional - just if you're serving chips with it)

Sauce ingredients:

  • 1x 400g tin of chopped tomatoes
  • 2 garlic cloves
  • 1 tsp thyme
  • 1 tbsp Worcestershire Sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 50ml chicken stock (boiling water and 1/4 stock cube)

Instructions

  1. Begin by cutting the pepper and onion into chunky bite-sized pieces, then peel and crush the garlic cloves
  2. Add the chopped onions, peppers and sausages into the air fryer, sprinkle with the paprika and a drizzle of oil and cook for 8 minutes on air fry mode - or until your sausages are browned a little
  3. Whilst this is cooking - make up the chicken stock using boiling water and a chicken stock cube
  4. Then, transfer the sausage and veg into the other basket - this basket should be completely empty and your food on the base of the basket
  5. Add the sliced potatoes into the basket you've just transferred the sausages out of and shake to coat in any residual oil (add a little more oil if needed) - cook for 20 mins on air fry or until cooked to your liking
  6. To the sausages and veg - add the rest of the ingredients (the 'sauce' ingredients) and stir to combine using a plastic utensil
  7. Cook this on 'bake' mode for 15 minutes
  8. Then, serve and enjoy!

Notes

This recipe is for 2 servings but can easily be halved if you're cooking for yourself only.
